The organization determines what competence is needed by people under its control, external providers included, whose work affects its food safety performance and how effective the system is; it makes sure those people, the food safety team and the operators of the hazard control plan among them, are competent through education, training and/or experience; it makes sure the food safety team brings together knowledge and experience from several disciplines in building and running the FSMS, covering the products, processes, equipment and hazards within scope; where needed it acts to gain the competence and evaluates whether that action worked; and it keeps documented information to evidence competence.
