Codex General Principles of Food Hygiene (CXC 1-1969, Rev. 2022) 19.12: 19.12 HACCP training

Staff are trained in HACCP principles and application. Working instructions and procedures define the tasks of operating staff in charge of each CCP; training is pitched to the knowledge and skills of the trainees, reviewed periodically and updated where necessary, and retraining may be part of corrective action for some deviations. The code also encourages cooperation and joint training between FBOs, competent authorities, trade groups and consumer organisations.
