Codex General Principles of Food Hygiene (CXC 1-1969, Rev. 2022) 13.3: 13.3 Water

Water, and ice and steam made from it, are fit for their purpose on a risk based approach and do not contaminate food. Water and ice are stored and handled so they are not contaminated, and steam that contacts food is generated without contaminating it. Water unfit for food contact (some fire fighting water, steam that does not contact food) runs in a separate system that neither connects to nor can flow back into the food contact water system. Recirculated or recovered water (for example by evaporation or filtration) is treated where needed so it does not compromise safety and suitability.
