US FDA Food Code 2026 5-204-5-205: 5-204 and 5-205 Plumbing location, operation and maintenance

Handwashing sinks are placed for convenient use in food preparation, dispensing and warewashing areas and in or next to toilet rooms (Pf); backflow devices and water conditioning devices are placed where they can be serviced. Handwashing sinks are always accessible (Pf), used only for handwashing (Pf), and automatic facilities are used per the maker (Pf). Nobody creates a cross connection between drinking water and non-drinking or unknown quality water (P), and non-drinking water piping is durably identified (Pf). Water treatment devices and backflow preventers are inspected and serviced on a schedule per the maker and local water conditions, with records kept by the person in charge (Pf). Reservoirs of produce fogging devices are maintained and cleaned at least weekly by draining and dismantling, brush cleaning with detergent, flushing and rinsing with at least 50 mg/L hypochlorite (P). Plumbing is repaired according to law (P) and kept in good repair.
