Codex General Principles of Food Hygiene (CXC 1-1969, Rev. 2022) 13.1.1: 13.1.1 Product description

An FBO that produces, stores or handles food has a description of it, individually or for groups of products with similar inputs, characteristics (pH, water activity), process steps or purpose, without losing awareness of hazards or suitability. As appropriate it covers intended use (ready-to-eat or for further processing), products for vulnerable groups (infant formula, food for special medical purposes), relevant specifications (composition, water activity, pH, preservation method, allergens present), limits set by the competent authority or, lacking them, by the FBO, instructions for further use (keep frozen, cooking time and temperature, use-by date), storage and transport conditions, and packaging used.
