Codex General Principles of Food Hygiene (CXC 1-1969, Rev. 2022) 13.1.2: 13.1.2 Process description

The FBO considers every step in the operation for a product and may develop a flow diagram showing the sequence and interaction of steps, where raw materials, ingredients and intermediates come in and where intermediates, by-products and waste leave; one diagram can serve similar products. The steps are confirmed by an on-site review (for a restaurant, the flow might run from receipt through chilled, frozen or ambient storage and preparation such as washing or defrosting to cooking).
