HACCP procedures are documented, and documentation and records are efficient, accurate, proportionate to the operation's nature and size and enough to verify that HACCP controls are in place and maintained; expertly developed guidance may form part of the documentation if it reflects the business's operations. Documentation examples: who is on the HACCP team; the hazard analysis, with the science behind including or excluding each hazard; CCP determination; critical limit determination and its scientific support; validation of control measures; and modifications to the plan. Record examples: CCP monitoring, deviations and corrective actions, and verification performed. Simple systems using existing paperwork (delivery invoices, checklists for product temperatures) and electronic records are acceptable.
