Codex General Principles of Food Hygiene (CXC 1-1969, Rev. 2022) 19.4: 19.4 Step 4: Construct the flow diagram

A flow diagram is built covering every step in producing the product, rework included, showing all inputs (ingredients, food contact materials, water and air where relevant); one diagram may serve products made by similar steps, and complex operations may be split into linked modules. Diagrams are clear, accurate and detailed enough for the hazard analysis and, as appropriate, show the sequence and interaction of steps, the entry points of raw materials, ingredients, processing aids, packaging, utilities and intermediates, any outsourced processes, where reworking and recycling happen, and where end products, intermediates, waste and by-products leave.
