A full product description is prepared with the relevant safety information: composition (ingredients), physical and chemical characteristics (water activity, pH, preservatives, allergens), processing methods (heat treatment, freezing, drying, brining, smoking and the like), packaging, shelf life, storage conditions and distribution method. Products with similar characteristics and steps may be grouped. Established limits for hazards (additive limits, regulatory microbiological criteria, maximum veterinary drug residues, heat treatment times and temperatures set by competent authorities) are considered and accounted for in the plan.
