A person requesting a variance provides a statement of the proposed variance citing the Code sections, an analysis of how the public health hazards those sections address will be handled instead, and a HACCP plan where 8-201.13(A) requires one (Pf). When a variance is granted or a HACCP plan is otherwise required, the permit holder keeps the approved variance at the establishment (Pf), complies with the approved HACCP plan and procedures (P), and keeps and provides on request records showing that CCP monitoring procedures, CCP monitoring, verification of the process and corrective actions for CCP failures are routinely carried out (Pf).
