The FBO makes sure the knowledge and expertise needed for an effective HACCP system are available, for example through a multidisciplinary team covering areas such as production, quality control, maintenance, and cleaning and disinfection, which develops the HACCP plan. Missing expertise is obtained externally (trade and industry bodies, competent authorities, independent experts, published HACCP material and sector guides); a well trained individual with such guidance may implement HACCP in house, and an externally developed generic plan may be used if tailored to the operation. The team defines the scope of the HACCP system (which products and processes it covers) and the prerequisite programmes that apply.
