The permit holder requires food and conditional employees to report to the person in charge, with details such as onset dates, if they have vomiting, diarrhea, jaundice, sore throat with fever, or an infected, draining lesion that is not properly covered; a diagnosis of norovirus, hepatitis A, Shigella spp., Shiga toxin-producing E. coli, typhoid fever (Salmonella Typhi) or non-typhoidal Salmonella; typhoid fever in the past three months without antibiotic therapy; or exposure to a confirmed outbreak or an ill household member within set windows (norovirus 48 hours, STEC or Shigella three days, typhoid 14 days, hepatitis A 30 days) (P). Employees must report and must comply with an exclusion or restriction. The person in charge notifies the regulatory authority when a food employee is jaundiced or diagnosed with one of the six pathogens (Pf); keeps a conditional employee with a reportable symptom or diagnosis (or, for highly susceptible population settings, a reportable exposure) from becoming a food employee until the reinstatement criteria are met; and excludes or restricts food employees under 2-201.12: exclusion for vomiting or diarrhea (unless noninfectious), jaundice within seven days, hepatitis A or typhoid diagnosis, and for asymptomatic norovirus, Shigella or STEC infection or sore throat with fever where a highly susceptible population is served; restriction in other settings, for asymptomatic non-typhoidal Salmonella, for uncovered infected lesions, and for exposed employees serving a highly susceptible population. Reinstatement follows 2-201.13: 24 hours symptom free for undiagnosed symptoms; regulator approval plus medical documentation or elapsed times for diagnosed infections (norovirus 48 hours, Shigella and STEC seven days, non-typhoidal Salmonella 30 days, or two consecutive negative results from a validated test at an accredited or certified laboratory, samples at least 24 hours apart and 48 hours after antibiotics); medical clearance for hepatitis A, typhoid or streptococcal sore throat; proper covering for lesions; and exposure windows or hepatitis A immunity for exposed employees.
