The permit holder is the person in charge or designates one, and makes sure a person in charge is present at the food establishment during all hours of operation (Pf). Where one permit holder has two or more separately permitted departments on the same premises, a single person in charge may cover all of them during periods when no food is being prepared, packaged or served. The regulatory authority may exempt establishments it judges to pose minimal risk.
