On request and during inspections the person in charge demonstrates knowledge of foodborne disease prevention, HACCP principles and the Code, suited to the operation's risks, by having no Priority item violations in the current inspection, by being a certified food protection manager who passed an accredited programme's test, or by answering the inspector correctly on 18 areas (Pf): personal hygiene and disease prevention; responsibility for ill employees; symptoms of foodborne diseases; time and temperature control of TCS food; hazards of raw or undercooked meat, poultry, eggs and fish; required cooking temperatures and times; cold holding, hot holding, cooling and reheating temperatures and times; cross-contamination, bare hand contact with ready-to-eat food, handwashing and keeping the premises clean and in repair; major food allergens and allergic reaction symptoms; adequate and properly designed, operated and cleaned equipment; cleaning and sanitizing of utensils and food contact surfaces; the water source and backflow and cross connection protection; poisonous or toxic materials; critical control points from purchase to service; compliance with any required HACCP plan; the responsibilities, rights and authorities of food employees, conditional employees, the person in charge and the regulator; reporting, exclusion and restriction duties; and, new in 2026, food defense steps against intentional adulteration. The person in charge is also a certified food protection manager (2-102.12), unless the regulator deems the establishment minimal risk; certification from a programme evaluated and listed by a Conference for Food Protection recognised accrediting agency satisfies both requirements (2-102.20).
