Symptoms to report to management, so that it can weigh exclusion or a medical examination, include diarrhoea, vomiting, jaundice, fever or a sore throat with fever, discharge from the eye, ear or nose, and visibly infected skin lesions such as boils or cuts. Staff with cuts or wounds are moved, where necessary, to work without direct food contact; if they keep working, wounds are covered with suitable waterproof plasters and gloves where appropriate, and the plasters are prevented from becoming a contaminant (for example by a colour contrasting with the food or by being metal or X-ray detectable).
