If allergens are handled or stored, a written allergen management programme lists every allergen that workers use, store or handle on site as prevailing regulations define them. Where relevant, it contains procedures, based on the operation's own risk assessment, for identifying allergens and keeping them apart when they are stored, handled, loaded and shipped. Any product that contains, or may contain, allergenic material is labelled in line with the allergen labelling rules of both the production country and the destination country.
