Floors, floor coverings, walls, wall coverings and ceilings are smooth and easily cleanable, apart from anti-slip coverings used for safety and permitted carpet. Utility lines are not needlessly exposed, do not obstruct cleaning, and horizontal lines are not run on the floor. Floor-wall junctions are coved and closed to 1 mm (1/32 inch) where floors are not water flushed, and coved and sealed with drains and grading where they are. Carpet is not used in preparation areas, walk-ins, warewashing, toilet areas, refuse rooms or other wet areas, and elsewhere is securely fixed and edged. Mats and duckboards are removable and easily cleanable; wall and ceiling coverings are attached to be easily cleanable; concrete, porous block or brick walls are finished and sealed smooth and nonabsorbent except in dry storage; wall and ceiling attachments (lights, vents, fans, decorations) are easily cleanable, except decorative items in consumer areas kept clean; and studs, joists and rafters are not exposed in moist areas except in temporary establishments.
