Indoor floor, wall and ceiling materials are smooth, durable and easily cleanable where operations take place, carpet is closely woven and easily cleanable, and surfaces in moist areas (food preparation, walk-in refrigerators, warewashing, toilet rooms, mobile unit servicing areas, areas flushed or spray cleaned) are nonabsorbent. Temporary establishments may have graded concrete, machine-laid asphalt, or dirt or gravel covered with approved mats, platforms or duckboards treated against dust and mud, and walls and ceilings that keep out weather and windblown dust. Outdoor walking and driving surfaces are concrete, asphalt, gravel or other materials treated to limit dust and mud; exterior surfaces of buildings and mobile units are weather resistant and lawful; outdoor refuse areas meet 5-501.11 and 5-501.12.
