A mobile food establishment's sewage holding tank is 15 percent larger than its water tank and slopes to a drain of at least 25 mm (1 inch) with a shutoff valve. Drainage systems, grease traps included, are designed and installed according to law; there is no direct connection between the sewer and a drain from equipment holding food, portable equipment or utensils (P), except floor drains in integral walk-in refrigerators and, where law allows, warewashing machines within 1.5 m (5 feet) of a trapped, vented floor drain and warewashing or culinary sinks. Grease traps are easily accessible for cleaning. Sewage is conveyed through an approved sanitary system or lawful transport vehicles, tanks, pumps and hoses (P); mobile unit wastes are removed at an approved servicing area or by a sewage transport vehicle without creating a hazard or nuisance (Pf), and waste retention tanks are flushed and drained in a sanitary way. Sewage goes to a public treatment plant or a lawful individual disposal system (P); condensate, other non-sewage liquids and rainwater are drained according to law.
