Drainage and waste disposal systems are adequate, well maintained and built so they are unlikely to contaminate food or the water supply; plumbing prevents backflow, cross connections and sewer gas backup, and drainage never runs from highly contaminated areas (toilets, raw production) towards areas where finished food is exposed. Trained staff collect and dispose of waste, with disposal records where appropriate; the waste disposal site is away from the establishment; waste, by-product and inedible or hazardous substance containers are identifiable, suitably built and where appropriate impervious, and containers for hazardous substances awaiting disposal are marked and, where appropriate, lockable.
