US FDA Food Code 2026 4-901-4-902: 4-901 and 4-902 Drying, lubricating and reassembling

After cleaning and sanitizing, equipment and utensils are air dried or adequately drained as 40 CFR 180.940 allows before contact with food, and are not towel dried (air dried utensils may be polished with clean dry cloths). Wiping cloths laundered without a mechanical dryer are air dried where they and clean items cannot be contaminated, unless stored in sanitizer. Food contact surfaces needing lubrication get 7-205.11 lubricants applied without contaminating them, and equipment is reassembled without contaminating food contact surfaces.
