US FDA Food Code 2026 4-204.110-123: 4-204.110 to 4-204.123 Functionality: shellfish tanks, vending controls, thermometers in units, warewashing machines, drainage and vending closures

Molluscan shellfish life-support display tanks are not used for shellfish sold for eating and are marked display only (P), unless run under a variance and approved HACCP plan that keeps other fish water out, protects shellfish quality and keeps source identity (Pf). Machines vending TCS food have automatic shutoff that stops vending after a temperature failure until serviced and restocked (P), with limits of 30 minutes above 5°C after restocking a refrigerated machine and 120 minutes below 57°C for a hot machine (P). Refrigerated and hot holding units have a sensor in the warmest or coolest part and an easily viewed integral thermometer, except where impractical (steam tables, salad bars, heat lamps and similar); food and warewasher thermometers read in steps of 1°C or 2°F or less (Pf). Warewashing machines carry a readable manufacturer data plate (wash, rinse and sanitizing temperatures, rinse pressure, conveyor speed or cycle time), have baffles or curtains between tanks, thermometers in each tank and at the final rinse manifold or chemical tank (Pf), automatic detergent and sanitizer dispensing with visual verification or alarm when installed after code adoption (Pf), and a pressure gauge on the fresh hot water sanitizing rinse line (in a 1/4 inch IPS valve if upstream of the control valve). Manual hot water sanitizing sinks have an integral heater holding at least 77°C (171°F) and a basket for immersion (Pf). Warewashing sinks and drainboards are self-draining; compartments collecting moisture slope to a drain; vending machines have leakage pans for paper beverage containers and internal waste receptacles with overflow shutoff for bulk liquid; case lot dollies, pallets, racks and skids are movable; and vending doors and service openings have gaps of no more than 1.5 mm (1/16 inch).
