Cast iron is limited to cooking surfaces and to serving utensils used in an uninterrupted cook to serve process; ceramic, china, crystal and decorative utensils meet lead limits by category (mugs 0.5, large hollowware 1, small hollowware 2.0, flatware 3.0 mg/L) (P), pewter with over 0.05% lead is not a food contact surface (P) and solder or flux over 0.2% lead is not used on food contact surfaces; copper and brass do not contact food below pH 6 or sit between a backflow preventer and a carbonator (P), except in pre-fermentation and fermentation brewing; galvanized metal does not contact acidic food (P); sponges do not touch cleaned or in-use food contact surfaces; wood is limited to hard maple or equivalent cutting boards, blocks, bakers' tables and utensils, confectionery paddles, shipping containers for whole produce and nuts, and untreated or approved-preservative containers for foods that are peeled; nonstick cookware is used with nonscratching utensils; nonfood contact surfaces exposed to splash or frequent cleaning are corrosion-resistant, nonabsorbent and smooth.
