US FDA Food Code 2026 4-204.11-19: 4-204.11 to 4-204.19 Functionality: hoods, openings, dispensing, vending closures, bearings, beverage tubing, ice units and condensers

Hood systems prevent grease or condensation dripping onto food or clean items. Equipment lids overlap and slope to drain, openings for lids are flanged up at least 5 mm, and piping, thermometers or shafts entering equipment have watertight joints or drip aprons with flanged openings. Dispensers of unpackaged liquid food or ice divert drips and splash from the receiving container, recess the delivery tube, chute and orifice against hand contact, protect them with a self-closing door when outdoors unprotected or unsupervised, and keep self-service actuators away from cup lips; equipment holding homogeneous liquid TCS food outside temperature control maintains commercial sterility of aseptically packaged food and meets NSF/ANSI 18 (P). Vending machines outdoors or unsupervised have self-closing dispensing doors. Bearings and gear boxes cannot leak lubricant into food or onto contact surfaces; beverage tubing and cold plates are not in stored ice (except integral cold plates); liquid waste drains do not pass through ice machines or bins; integral condensers are separated from food by a dustproof barrier; and vending can openers are protected from contact and contamination.
