US FDA Food Code 2026 4-10: 4-1001 to 4-1003 Disinfection of equipment and utensils (new in 2026)

Where available sanitizers do not control the pathogens of concern, equipment, food contact and nonfood contact surfaces and utensils are disinfected (P) when contaminated with vomit, feces, blood or other bodily fluids that can spread disease, and during a foodborne disease outbreak or imminent health hazard (P). Surfaces are disinfected according to the EPA-registered label, and disinfectants on food contact surfaces are rinsed off with potable water unless the label says otherwise (P).
