Section 13: Control of operation – Codex General Principles of Food Hygiene (CXC 1-1969, Rev. 2022)

Codex General Principles of Food Hygiene (CXC 1-1969, Rev. 2022) 13.2.6: 13.2.6 Chemical contamination

Systems prevent or minimise contamination by harmful chemicals such as cleaning agents, non-food grade lubricants and residues of pesticides and veterinary drugs including antibiotics. Toxic cleaning compounds, disinfectants and pesticides are identified, stored safely and used so that food, food contact surfaces and packaging are protected. Additives and processing aids that could be harmful if misused are controlled so they are used only as intended.
