US FDA Food Code 2026 4-401-4-402: 4-401 and 4-402 Location and installation of equipment

Equipment and cabinets storing food or clean equipment, utensils, linens and single-service articles are not placed in locker rooms, toilet rooms (Pf), garbage or mechanical rooms, under unshielded sewer lines, under leaking or condensing pipes including water-based fire protection systems, under open stairwells or near other contamination (linen and single-service cabinets may be in locker rooms); clothes washers and dryers are placed away from exposed food and clean items. Fixed equipment is spaced for cleaning on all sides, spaced within 1 mm (1/32 inch) of adjoining surfaces, or sealed where exposed to spillage; counter-mounted equipment that is not easily movable is sealed or raised on legs. Floor-mounted fixed equipment is sealed to the floor or on legs giving 15 cm (6 inches) clearance (10 cm where the floor underneath is within 15 cm of the cleaning access point), except customer-area display units with clean floors; counter-mounted equipment is raised 10 cm (4 inches), or 7.5 cm or 5 cm where the tabletop beneath is shallow.
