Codex General Principles of Food Hygiene (CXC 1-1969, Rev. 2022) 9.3.2: 9.3.2 Food control and monitoring equipment

Equipment for cooking, heating, cooling, storing or freezing food reaches the required food temperatures as quickly as safety and suitability require and holds them effectively; where necessary it allows temperature to be monitored and controlled, with monitoring equipment calibrated where appropriate so process temperatures are accurate. Where necessary the equipment also controls and monitors humidity, air flow and other factors that could affect safety or suitability.
