Instruction and supervision match the size of the business, its activities and the foods involved. Managers, supervisors and workers know enough about hygiene principles and practices to spot deviations and act within their duties. The effectiveness of training and instruction is assessed periodically, supervision and verification confirm procedures are followed, and anyone performing food control activities is trained to be competent and to understand how their task affects safety and suitability.
