NSW Food Regulation 2025
Part 6: meat food safety scheme (sections 68 to 111, Schedules 4 to 6) – NSW Food Regulation 2025

NSW Food Regulation 2025 92: Abattoirs slaughtering sheep run a Food Authority approved lamb and hogget identification system, change it only with approval, and make animals, carcases, meat and records available to monitor it

What does 92 require?

An abattoir that kills sheep must give the Food Authority written details of how it will tell lamb from hogget meat: the identification method, where in the process the call is made, how the identification is applied and how it is kept until the lamb or hogget brand goes on. It may not use the system until the Authority is satisfied it will work and be maintained and approves it, may not alter it without approval, and must produce animals, carcases, meat and records whenever an authorised officer needs them to monitor the system.
