An abattoir must operate to the Australian Standard that matches what it slaughters: AS 4696:2023 for red meat species, AS 4465-2006 for poultry, AS 4466-1998 for rabbits, AS 5010-2001 for emu and ostrich and AS 4467-1998 for crocodiles, applying each relevant standard where several species are killed (all as in force from time to time). Where poultry, rabbit, ratite or crocodile meat is passed only as fit for animal food, the abattoir also follows AS 4696:2023 Part 6 clause 17 for that meat and its products.
