NSW Food Regulation 2025
Part 10: egg food safety scheme and the Salmonella Enteritidis licence condition (sections 157 to 179, Schedule 8) – NSW Food Regulation 2025

NSW Food Regulation 2025 170-171: Pasteurise egg products and blended mixtures to Standard 4.2.5 with Manual-compliant equipment, or by an equivalent or greater lethal process using Authority-approved equipment

What does 170-171 require?

Pasteurising egg product means following Standard 4.2.5 with equipment that meets the NSW Food Safety Schemes Manual, or an alternative time and temperature combination, or another process, that kills pathogens at least as effectively, the latter using Food Authority approved equipment that meets the Manual. Blended egg product mixtures must reach the same equivalent lethal effect by heat or another process.
