Part 10: egg food safety scheme and the Salmonella Enteritidis licence condition (sections 157 to 179, Schedule 8) – NSW Food Regulation 2025

NSW Food Regulation 2025 168: Deal with visibly dirty eggs by selling them to a licensed washer or dry cleaner, cleaning the shell, or breaking them by a low-contact process that pasteurises the product

What does 168 require?

Egg producers and egg businesses must handle any egg for people whose shell visibly carries droppings, dirt or other material (labels, stickers and ink stamps aside) in one of three ways: sell it to a licensee authorised to wash or dry clean eggs; clean the shell until the visible matter is gone; or separate shell from contents by a process that limits shell contact, avoids contaminating the product and pasteurises it. Maximum penalty 25 penalty units.
