NSW Food Regulation 2025 164: Sell unpasteurised egg products and unpasteurised blended egg mixtures only to a licensee authorised to pasteurise them

What does 164 require?

Liquid egg or blended egg product mixture that has not been pasteurised may be sold only to the holder of a licence that authorises pasteurising that product. Maximum penalty 25 penalty units.

162 Egg producers comply with the Code primary production rules for eggs: small producers Standards 2.2.2, 3.2.2 clause 4, 4.1.1 and 4.2.5 Divisions 1 and 2; egg businesses also Standards 3.1.1, 3.2.1, 3.2.2 Divisions 1 and 4 and 3.2.3
165-166 Never use unpasteurised egg product in food except to make a blended mixture, and never put an unpasteurised blended mixture into food for sale
167 Sell cracked eggs only to licensed egg product makers or processors, and use them in food only to make egg product or blended mixtures (or when cracked during preparation)
168 Deal with visibly dirty eggs by selling them to a licensed washer or dry cleaner, cleaning the shell, or breaking them by a low-contact process that pasteurises the product
169 Do not sell eggs from birds given veterinary chemicals in breach of the Stock Medicines Act or Pesticides Act unless the Food Authority approves after shown compliance with Standard 1.4.2
170-171 Pasteurise egg products and blended mixtures to Standard 4.2.5 with Manual-compliant equipment, or by an equivalent or greater lethal process using Authority-approved equipment
172 Egg licensees have analysed at their own cost the Manual-listed eggs and egg products, non-reticulated water, and, for Schedule 8 farms, each shed and poultry housing area
173 Use NATA or Food Authority approved laboratories for egg testing and notify failed results orally within 24 hours and in writing within 48 hours
