Codex General Principles of Food Hygiene (CXC 1-1969, Rev. 2022) 9.1.4: 9.1.4 Temporary and mobile food establishments and vending machines

Stalls at markets, street food vehicles, vending machines, and tents, marquees and other temporary premises are placed, designed and built so that, so far as reasonably practicable, food is not contaminated and pests find no harbourage, and have suitable toilet and handwashing facilities where appropriate.
