Codex General Principles of Food Hygiene (CXC 1-1969, Rev. 2022) 9.2.7: 9.2.7 Storage facilities

Adequate and, where necessary, separate facilities store food products, ingredients, food packaging and non-food chemicals (cleaning materials, lubricants, fuels) safely and hygienically, allowing raw and cooked foods, and allergenic and non-allergenic foods, to be kept apart. Food storage is designed and built for easy maintenance and cleaning, to keep pests out and give them no harbourage, to protect food from contamination including allergen cross-contact, and where necessary to limit deterioration through temperature and humidity control. Cleaning materials and hazardous substances have separate, secure storage.
