Critical limits, which are measurable or observable, are set for each CCP to show whether it is in control and to separate acceptable from unacceptable product; more than one parameter may have a limit at a step (time and temperature in heat treatment). Typical criteria are minimum or maximum values for temperature, time, moisture, pH, water activity, available chlorine, contact time, belt speed, flow rate, viscosity, conductance, or observable settings such as a pump setting. Limits are specified and scientifically validated to show they can control the hazard to an acceptable level, using the FBO's own studies or existing literature, regulations, authority guidance or third party studies (for example an equipment maker's roasting study), as described in CXG 69-2008.
