Codex General Principles of Food Hygiene (CXC 1-1969, Rev. 2022) 11.3.1: 11.3.1 Waste management

Suitable provision is made for removing and storing waste; waste is collected and held in covered containers where possible and not allowed to build up or overflow in food handling, storage or other work areas or their surroundings in a way that affects safety or suitability. Staff who remove waste, hazardous waste included, are trained so they do not spread contamination. Waste storage areas are easy to identify, kept clean, resistant to pests and located away from processing areas.
