BRCGS Global Standard for Food Safety Issue 9 5.3.4: 5.3.4 Allergen management procedures: segregation, clothing, dedicated equipment, scheduling, movement, waste, labelling and change control

Procedures must stop products that do not contain an allergen from coming into cross-contact with it. As appropriate these include segregation by space or by time in storage, processing and packing; separate protective clothing; dedicated, identified equipment and utensils; production scheduling that reduces changeovers; restrictions on how allergenic materials are moved; handling of waste and spills; labelling of intermediate products; and control of changes to packaging and labels.
