Walls of all food premises are of solid construction (preformed panels with suitable filling qualify) and finished as Table 3.2 sets out by area. Table 3.2 rates stainless steel (joints welded, screw covers waterproof), epoxy grouted ceramic tiles, heat welded vinyl sheet, aluminium sheet and sealed preformed panels (mastic sealed H bar joints, set on a dwarf wall or plinth in wet and preparation areas) as suitable across food areas, and limits finishes such as smooth painted plaster, sealed timber panelling, feature brick, painted brickwork, trowelled cement and sealed concrete to less demanding areas; finishes may be combined.
