When animal food (beef, eggs, fish, lamb, milk, pork, poultry, shellfish) is served raw, undercooked or not otherwise processed to eliminate pathogens, ready-to-eat or as an ingredient, the permit holder informs consumers of the higher risk by a disclosure and a reminder in writing (brochures, menu or deli case advisories, labels, table tents, placards) (Pf). The disclosure describes the items (for example raw oysters, raw-egg Caesar salad, hamburgers cooked to order) or asterisks them to a footnote saying they are or may be served raw or undercooked; the reminder asterisks them to a footnote stating that safety information is available on request or that eating raw or undercooked meats, poultry, seafood, shellfish or eggs may increase the risk of foodborne illness (optionally, especially with certain medical conditions) (Pf).
