US FDA Food Code 2026 3-202: 3-202 Specifications for receiving

Refrigerated TCS food arrives at 5°C (41°F) or below unless a law such as milk or shellfish law allows another temperature (P); raw eggs arrive in refrigerated equipment holding 7°C (45°F) or less (P); cooked TCS food received hot is at 57°C (135°F) or above (P); food labeled and shipped frozen arrives frozen (Pf); and TCS food shows no evidence of previous temperature abuse (Pf). Food contains no unapproved additives or excess additives, GRAS or prior sanctioned substances, curing ingredients or pesticide residues (P). Eggs are clean and sound within Grade B restricted egg tolerances (P); egg products, fluid and dry milk products, frozen milk products and cheese are pasteurized (cheese unless a CFR alternative applies) (P); packages are intact (Pf); ice is made from drinking water (P); shellstock is reasonably free of mud, dead and broken shells. Molluscan shellfish arrive in nonreturnable containers with dealer tags or labels identifying the source and the sell-by or shucked date (Pf), untagged containers being liable to a hold order or seizure; prepackaged juice comes from a processor with a 21 CFR 120 HACCP system (Pf) and is pasteurized or treated for a 5-log reduction (P).
