Molluscan shellfish stay in the container they arrived in until immediately before sale or preparation, and shellfish from containers with different certification numbers, harvest dates or growing areas are not commingled before the consumer orders (Pf). Shellstock or in-shell product may be displayed on drained ice or in a display container, and shucked shellfish held in a display container or repacked into consumer self-service containers where law allows, if source identification is kept and correlated to sale dates and the shellfish are protected (repack labeling kept 90 days). Tags or labels stay on the container until it is empty, the date the last shellfish is sold or served is recorded on the tag, label or invoice, and the tags, labels or invoices are kept in chronological order for 90 calendar days from that date in an approved record keeping system (Pf).
