US FDA Food Code 2026 3-304.15-17: 3-304.15 to 3-304.17 Gloves, tableware for refills and refilling returnables

Single-use gloves are used for one task only (for example ready-to-eat or raw animal food) (P); if approved, an interior single-use glove may stay on under a loose task-specific exterior glove removed by gravity without contaminating hands or the inner glove, which must remain intact and clean, with a single-use exterior glove discarded at once; gloves are discarded when damaged, soiled or contaminated by an interruption (P). Slash-resistant gloves touch only food that will be cooked, unless they have or are covered by a smooth, durable, nonabsorbent surface or a single-use glove (Pf); cloth gloves touch only food that will be cooked. Soiled tableware is not used for second portions or refills (other than refilling a cup without touching its lip area), and self-service consumers do not reuse soiled tableware except drinking cups refilled by a contamination-free process. Containers may be refilled with food by an employee or consumer if designed for multiuse, cleaned and sanitized before refilling and visually checked by an employee (Pf); refilling in the establishment is a contamination-free transfer, the container does not touch food contact surfaces and those surfaces are cleaned and sanitized (Pf); containers meant for refilling at a processing plant are not refilled on site; consumer containers that are not food specific may be filled at a water vending machine.
