Codex General Principles of Food Hygiene (CXC 1-1969, Rev. 2022) 9.2.5: 9.2.5 Air quality and ventilation

Natural or mechanical ventilation is adequate to limit airborne contamination (aerosols, condensation droplets), help control room temperature, control odours that could affect suitability, and control humidity where it matters to safety or suitability (for example to stop dried foods taking up moisture that would allow microbial growth and toxic metabolites). Ventilation is designed so air does not move from contaminated to clean areas, and is easy to maintain and clean.
