BRCGS Global Standard for Food Safety Issue 9 3.3.1: 3.3.1 Records legible, retrievable, with authorised and justified alterations and secure electronic storage

Records must be legible, well kept and possible to retrieve. Any change to a record must be authorised with the reason recorded, and electronic records must be held securely, with access and amendment controlled, and backed up.
