BRCGS Global Standard for Food Safety Issue 9 2.2.1: 2.2.1 Prerequisite programmes established, zoned by risk, with controls documented and included in the HACCP review

The site must establish and maintain the environmental and operational prerequisite programmes needed for safe and legal food (cleaning and disinfection, pest management, maintenance, personal hygiene, training, supplier approval, transport, cross-contamination prevention, allergen management and others), taking account of the production risk zoning, with the control measures and monitoring documented and included in the development and review of the HACCP plan.
