BRCGS Global Standard for Food Safety Issue 9 2.10.1: 2.10.1 A monitoring procedure for each CCP able to detect loss of control in time to act

Every CCP must have a monitoring procedure that confirms the critical limits are met, can detect a loss of control and, wherever possible, provides information quickly enough for corrective action. Monitoring may be online, offline or continuous, and where samples are taken discontinuously they must represent the batch.
