When displaying food the business takes all practicable measures to protect it from contamination. For unpackaged ready-to-eat food displayed for self service it supervises the display effectively so that food a customer has contaminated, or is likely to have contaminated, is removed without delay, provides separate serving utensils for each food or another dispensing method that limits contamination, and provides protective barriers against customer contamination; these self service rules do not apply to food in tamper resistant equipment or containers. Ready-to-eat food not meant for self service is not displayed for sale on a counter or bar unless it is enclosed, contained or wrapped. Potentially hazardous food is displayed under temperature control, and food intended to be displayed frozen stays frozen.
