The business takes all practicable measures to accept only food that is protected from the likelihood of contamination. On an authorised officer's request it can show, to the officer's reasonable satisfaction, the name and Australian business address of the vendor, manufacturer or packer (or the Australian importer for imported food) and the prescribed name, or a name or description showing the true nature, of food on the premises. It takes all practicable measures to accept potentially hazardous food only at 5°C or below or 60°C or above, unless the transporting business demonstrates that the temperature, given the transport time, will not affect microbiological safety, and to accept food meant to arrive frozen only when it is frozen.
